What's in the box
Choose your main:
- Turkey: free-range Bronze turkey from Potash Farm, reared on pasture near Tring
- Beef: Red Ruby Devon, pasture-finished here at Bailey Hill Farm
- Lamb: Exlana, pasture-finished here at Bailey Hill Farm, boned and rolled
- Chicken: from a local farm, stuffed with garlic, onion and lemon
- Gammon: British gammon from our Buckinghamshire butcher
- Nut roast (vg): nuts, vegetables and coconut milk
With all the trimmings: rosemary and garlic roast potatoes, jumbo pigs in blankets, Yorkshire puddings, maple and thyme carrots and parsnips, Brussels sprouts, stuffing and gravy.

The nut roast box is fully vegan, with vegan versions of every trimming. Yorkshire puddings come with the other mains.

How to cook it
Before you start: heat your oven to 200°C with a tray of oil in for the potatoes, and take your meat out of the fridge 30 minutes before cooking.
Turkey (180°C, then rest): serves 1: 45 mins + 15 mins rest. Serves 2: 1 hr 15 + 30 mins. Serves 4: 2 hrs + 45 mins. Serves 6: 2 hrs 10 + 45 mins. Serves 8: 2½–3 hrs + 1½ hrs. Serves 10: 3 hrs + 1 hr.
Beef (medium rare): 15 mins at 200°C, then 30 mins at 180°C. Rest before carving.
Lamb (pink): 20 mins at 200°C, then about 1 hour at 180°C. Rest for 15 mins.
Chicken: about 1 hour at 180–200°C. Rest before carving.
Gammon: 15 mins at 200°C, then 1 hr 15 at 160°C. Rest before carving.
Nut roast: 20 mins at 180°C. Run a knife round the edge to release it.
Beef, lamb, chicken and gammon times are for a whole joint. For a box for 1 or 2, halve them.
Roast potatoes: about 60 mins at 180–200°C, in hot oil.
Carrots and parsnips, stuffing, pigs in blankets: about 30 mins at 180–200°C.
Yorkshire puddings: about 10 mins at 180–200°C.
Sprouts and greens: about 10 mins in a pan.
Gravy: 10 mins on a low heat. Add the juices from your resting meat.
Brie, cranberry and bacon roly-poly: 25–30 mins at 200°C, until golden and piping hot.
Bread and butter pudding: 20–25 mins at 180°C, until piping hot and golden on top.
Mince pies: serve as they are, or warm for 5–10 mins at 160°C.
Mulled wine: pour the wine into a pan, add the spice mix and warm gently for 10–15 mins, just below a simmer.
Baste the meat every 30 minutes. Using a thermometer? Beef and lamb are medium rare at 55–59°C; turkey, chicken and gammon need 75°C.
